最近的私房爆賣(mài),非楊梅蛋糕莫屬了,六月的楊梅季,趕緊安排起來(lái)~

蛋糕胚用的是小四卷的配方,抹上楊梅奶油,一片片卷起來(lái)。所以切開(kāi),可以看到層層的柔軟蛋糕夾滿(mǎn)豐富的餡料,無(wú)論外表,還是內(nèi)在,同樣在線。每一口都吃到楊梅的酸甜和清香,正好中和了奶油本身的濃郁奶香。布滿(mǎn)了果肉,細(xì)細(xì)品嘗,果香回味,太適合夏天了。

蛋糕胚(小四卷)雞蛋4個(gè)玉米油40克牛奶?40克糖40克低筋面粉40克楊梅果醬?楊梅果肉820克糖?135克檸檬汁半個(gè)楊梅奶油淡奶油280克+楊梅果醬80克

①制作楊梅果醬新鮮楊梅清洗干凈,加入適量水和鹽,浸泡20分鐘以上

瀝干水,剪出楊梅果肉,注意要保留湯汁,都是精華啊

②不粘鍋倒入楊梅果肉和冰糖,中小火熬煮,不停攪拌(果肉和糖的比例,有些配方是2:1,或3:1,是可以按照楊梅的甜度來(lái)調(diào)整,當(dāng)然,加入的糖比較高,保存的時(shí)間就更久了)

楊梅的果汁比較多,熬煮的時(shí)間會(huì)長(zhǎng)一點(diǎn),一定要不停攪拌。水分蒸發(fā)一大部分后,會(huì)變濃稠,加入檸檬汁

稍微收干水分熬制變濃稠的果醬狀就可以了

③裝入提前已經(jīng)消毒的瓶子里,密封好,倒扣等待冷卻后,放入冰箱冷藏保存。(每次取出果醬的勺子一定要干凈無(wú)水無(wú)油)

④制作楊梅蛋糕,先準(zhǔn)備小四卷蛋黃先加入玉米油攪拌均勻

再加入牛奶,繼續(xù)攪拌均勻

⑤篩入低粉,攪拌至看不見(jiàn)干粉的狀態(tài)

⑥打發(fā)蛋清,分三次加入細(xì)砂糖,打發(fā)至小彎勾的狀態(tài)

(如果是做蛋糕卷的話(huà),打發(fā)至濕性大彎勾的狀態(tài)即可)

⑦取部分的蛋白霜與蛋黃糊翻拌均勻

再倒回剩余的蛋白霜里,繼續(xù)翻拌均勻。做好的蛋糕糊非常細(xì)膩~

⑧倒入鋪有油紙的28*28烤盤(pán),抹平

放入已經(jīng)提前預(yù)熱好的烤箱,160度,烘烤28-30分鐘,我用的是長(zhǎng)帝大白鯨,時(shí)間溫度僅供參考

⑨制作楊梅調(diào)味奶油淡奶油隔著冰水打發(fā)至濃稠酸奶狀

加入適量的楊梅果醬。果醬的甜度足夠了,所以打發(fā)淡奶油時(shí)候,我并沒(méi)有加細(xì)砂糖

翻拌均勻即可~喜歡顏色深紅一些,喜歡味道更濃郁一些,就多加一點(diǎn)楊梅果醬

⑩我把蛋糕胚切出兩片寬度是8cm的蛋糕片,左右兩邊切一小段小斜坡,方便卷起來(lái)。再抹上適量的楊梅奶油

?剩余的楊梅奶油裝入裱花袋,剪個(gè)小孔,一手轉(zhuǎn)動(dòng)裱花臺(tái),一手從下往上擠上奶油

利用軟刮板,轉(zhuǎn)動(dòng)裱花臺(tái),抹平整。楊梅奶油的狀態(tài)跟奧利奧奶油有點(diǎn)相似,這樣抹面,對(duì)于新手操作更輕松
