制作步驟01所有材料除了黃油外,倒入廚師機(jī)的攪面缸中,慢速攪拌3分鐘,然后調(diào)中速攪打,打至面筋擴(kuò)展階段,撐開一小塊面團(tuán),戳破:邊緣有鋸齒;

02加入提前軟化好的黃油,慢速攪拌,待面團(tuán)慢慢吸收完黃油后,開高速攪打面筋至完成擴(kuò)展階段,撐開一小塊面團(tuán):筋膜薄透,戳開邊緣光滑無鋸齒;

03起面折疊,收?qǐng)A,放入發(fā)酵盒中,室溫基礎(chǔ)發(fā)酵60分鐘;

04發(fā)酵完畢,將面團(tuán)均分成4等份,每份分別排氣、折疊,揉圓,放入發(fā)酵盒繼續(xù)松弛15分鐘;

05取出面團(tuán),做第一次搟卷:搟開排氣,翻面再折疊,放入發(fā)酵盒繼續(xù)松弛15分鐘;

06做第二次搟卷:搟長(zhǎng),翻面,收卷;

07兩個(gè)面團(tuán)放入一個(gè)450克的吐司模具中,進(jìn)行最后發(fā)酵:溫度34度,濕度75%,發(fā)酵大約60分鐘至吐司九分滿;

08烤箱提前預(yù)熱,上火160度,下火210度。烘烤前在吐司表面噴點(diǎn)水,烘烤25分鐘左右;Tips:由于山型吐司開蓋烘烤,一般是采用上火低,下火高的烘烤溫度,這樣是避免吐司上色太快或者表面過早的結(jié)皮硬化從而影響膨脹。

09出爐震模,晾涼就可以食用了~
