T130裸麥粉…....…150g雷蒙特酵母粉……..1g水……………….....….150g>制作步驟
① 酸面種制作所有食材攪拌均勻放置25℃室溫12~15小時(shí)即可②發(fā)酵先將面團(tuán)揉好發(fā)酵45分鐘后再翻面發(fā)酵45分鐘③分割將發(fā)酵好的面團(tuán)均勻分割成500g的面團(tuán)后稍微排氣揉成長棍形,松弛20分鐘④ 整形將松弛好的面團(tuán)進(jìn)行3折1排氣整形,放入發(fā)酵布上,發(fā)酵55分鐘⑤烘烤將發(fā)酵好的面包表面撒上T55面粉,然后用割刀在表面斜方向劃4-5刀,靜置5分鐘;烤箱溫度:240/210,噴蒸汽2秒鐘,烘烤30分鐘。
