制作步驟

制作斑斕麻薯01碗里倒入細(xì)砂糖、牛奶,攪拌均勻,加入木薯淀粉、唐亦斑斕凍干粉,繼續(xù)攪拌均勻;

02接著倒入不粘鍋中,開中小火,不停攪拌,直至成團(tuán);

03煮好后,倒入碗中,加入黃油,用手把黃油揉進(jìn)面團(tuán),直至完全吸收,面團(tuán)變得順滑,可以拉絲就做好了,封好保鮮膜,放常溫備用;

制作紅豆餡04低糖蜜紅豆倒入鍋中,加入淡奶油,中火加熱,期間不停攪拌,把紅豆餡煮至收汁,加入黃油攪拌均勻,密封冷藏備用;

制作原味墨西哥醬05把黃油、細(xì)砂糖用打蛋器打發(fā)均勻,分兩次加入蛋液,攪拌均勻,然后加入低筋面粉,用刮刀拌勻至無干粉的狀態(tài)即可,裝入裱花袋,放一旁備用;

制作斑斕酥粒06碗里倒入糖粉、唐亦斑斕凍干粉、黃油,用刮刀稍微拌勻后,用打蛋器打發(fā)均勻;

07接著加入奶粉、低筋面粉,用刮刀拌勻,稍微成團(tuán)后,直接用手揉勻搓散,成餅干碎的狀態(tài)后,密封冷藏備用;

制作面團(tuán)08除黃油以外,將所有材料倒入攪拌缸,慢速攪拌,使材料充分混勻,接著轉(zhuǎn)中高速攪打面團(tuán),至表面變光滑,取小塊面團(tuán)撐開,此時筋膜較厚,戳開有較明顯的鋸齒;

09加入提前軟化好的黃油,慢速攪拌,待面團(tuán)吸收黃油后,轉(zhuǎn)為高速,攪打面團(tuán)至完全擴(kuò)展?fàn)顟B(tài),此時筋膜薄透,戳開邊緣光滑;

10取出面團(tuán),折疊、收圓后放入發(fā)酵盒中,室溫27度左右,基礎(chǔ)發(fā)酵40分鐘;

面團(tuán)分割11基礎(chǔ)發(fā)酵后取出面團(tuán),分成8份,每份約60克;

12把分好的面團(tuán)滾圓,放入發(fā)酵箱,冷藏松弛30分鐘;

面團(tuán)整形13提前把紅豆餡和斑斕麻薯分為8份,紅豆餡每份約20克,斑斕麻薯每份約10克;

14取出面團(tuán)拍扁排氣,拍成四周薄中間厚;

15包入紅豆餡和斑斕麻薯,把底部收起來,捏合封口;

16接著給面團(tuán)表面刷上一層蛋白,并在酥粒上滾一圈,使面團(tuán)表面均勻沾上一層酥粒即可;

17整形好的面團(tuán)進(jìn)行最后發(fā)酵,溫度36度,濕度75%,參考時間60-70分鐘;

18面團(tuán)發(fā)酵至兩倍大后,在表面擠上墨西哥醬,再撒上斑斕酥粒;

烘烤19放入提前預(yù)熱的烤箱中,上火185度,下火180度,烘烤12分鐘,出爐后震盤放涼,這樣斑斕紅豆麻薯包就做好啦~
