蛋黃(無菌蛋)5只巧克力粉12G66% 巧克力幣83G白砂糖83G朗姆酒5G淡奶油500G

①將12G可可粉和75G淡奶油混合倒入小奶鍋,小火慢慢熬煮,不斷攪拌融合。

②看不見可可粉后,再將83G可可幣倒入可可奶油中,再不斷的攪拌融合。要不停的攪拌,攪到可可幣完全融化后,離火再攪拌一會(huì)。

③攪拌好的可可奶油醬放在一旁放涼備用??煽舍u非常濃稠,空氣里都是可可的馥郁香味。

④將83G白砂糖全部倒入蛋黃中。

⑤用打蛋器將白糖和蛋黃充分打發(fā)均勻,蛋黃的顏色越來越淡,體積越來越膨脹。

直到聽不見白砂糖的沙沙聲,提起打蛋器非常濃稠,就攪打充分了。(如圖所示)

⑥將攪打好的蛋黃和125G淡奶油一同倒入不粘鍋中,開小火慢慢熬煮,一邊煮一邊用刮刀攪勻。一定要小火慢慢煮,不然一不小心就成了蛋花湯。這一步非常的重要!蛋奶醬的濃稠程度決定了冰淇淋的濃稠口感?。ㄟ@一步大約需要10分鐘)

▽煮好的蛋黃醬非常濃稠,會(huì)黏掛在刮刀上(如圖所示)

⑦將剩下的300G淡奶油進(jìn)行打發(fā),出現(xiàn)紋路即可。

⑧將冷卻好的可可醬倒進(jìn)打發(fā)好的淡奶油中,打發(fā)均勻。

⑨倒入5G朗姆酒,略微再打發(fā)幾下。

⑩倒入冷卻后的蛋黃糊,用刮刀劃一字?jǐn)嚢杈鶆?。就可以裝入冰淇淋盒子或者雪糕模具進(jìn)行冷凍,冷凍時(shí)長(zhǎng)6小時(shí)以上,各式模具隨心選。
