- 蘿卜刨絲后稱量,再去準(zhǔn)備其它配料會(huì)比較不易出錯(cuò),而不是用整根蘿卜重量當(dāng)參考
- 蘿卜絲重量為粉類總重3.5 - 4倍比較合適,粉類太多會(huì)蓋住蘿卜本身的口感和清甜味道
- 蘿卜絲是干貨配料總重(臘味、蝦米、干貝等)的4-5倍,可以根據(jù)喜好適當(dāng)調(diào)整
- 少量澄粉可以幫助定型,沒(méi)有的話換成玉米淀粉,或者全部用粘米粉。
看起來(lái)甚至有點(diǎn)丑的蘿卜糕,卻完美的融合了那么多的元素——蘿卜本身的清香和微甜,臘味和干貨的鮮美。外表煎得脆脆的,內(nèi)部柔軟,還能真實(shí)地吃到蘿卜絲(而不是像很多餐廳里的只有粘米粉口感),這就是我心中的完美蘿卜糕。
