①主面團(tuán)和面皮面團(tuán)除后水、杏桃果干、熟核桃外其余所有材料一起攪拌至約9成面筋,取出600克做皮,再加入后水拌勻后加入果干、核桃拌勻,面團(tuán)溫度24度② 基礎(chǔ)發(fā)酵溫度28度下,發(fā)酵30分鐘,然后將面團(tuán)翻面,三度下冷藏12個小時③ 分割將主面團(tuán)分割成550g大小,面皮分割成100g大小,然后發(fā)酵30分鐘進(jìn)行回溫④ 發(fā)酵將發(fā)酵好的面團(tuán)進(jìn)行稍微排氣揉成半球形,然后將面皮搟開包裹在面團(tuán)表面,之后放在發(fā)酵布上室溫發(fā)酵30分鐘⑤ 整形將在發(fā)酵好的面包上隔網(wǎng)篩撒高粉在表面,然后用割刀在表面進(jìn)行開口⑥ 烘烤將整形好的面包,放在石板上送進(jìn)烤箱;烤箱溫度:240/210,噴蒸汽4秒鐘,烘烤20分鐘。
